Yoghurt marinated chicken skewers

 It's a simple recipe, easy to make, quick to cook, very healthy and very yummy.
Just perfect for a week night dinner!
Ingredients:
600g of chicken breasts, cut into 3 cm pieces
1 onion chopped roughly into rings
2 cloves of garlic, finely chopped
1 1/2 cups of plain low fat yoghurt
about a table spoon of lemon juice
salt. pepper
herbs for your taste
(I added oregano, it always goes well with chicken, and a bit of ground ginger).

Method:
In a big bowl (or a dish you could fit in your fridge later) mix all the marinade ingredients: yoghurt, onion rings, chopped garlic, lemon juice, herbs, salt and pepper.
Add chicken pieces into the marinade, mix well and pop it into the fridge for at least 6 hours.
When it's ready, preheat the oven to 210-220C.
Soak the wooden skewers in a shallow dish of water. Thread the chicken and onion rings onto skewers.
Cook in the oven for 20-25 minutes, or until cooked.

Tips:
You can also cook it on the grill or BBQ.
Serve with smashed potato and a green salad.
