Crispy and munchy muesli biscuits

Perfect with milk or a morning cup of tea. Kids will love it too. 


Ingredients:
2 large eggs
1 cup caster sugar
1 tea spoon orange or lemon zest
1 2/3 cups of sifted plain flour
1/2 tea spoon baking powder
1 cup of your favourite natural muesli

Method:
Preheat the oven to 180C.
Whisk eggs, sugar and orange zest together in a large bowl until creamy. Fold in flour, baking powder and muesli. Mix into a soft dough on a lightly floured bench. Shape into two 25cm x 7cm thick logs. Place logs onto a lined tray. Bake for 25 min or until gold and firm. Remove and rest for 20 min or until cool. Reduce the oven temperature to 150C.
Thinly slice logs about 10mm thick with a sharp serrated knive and place slices onto tray. Bake for 15-20 min, turning once until biscuits have dried out and are crisp.

Tip:
The consistency of the dough should be soft but firm enough to be shaped into thick logs. If the dough is turning out to tough, you can add a bit of milk into it.
Store in an airtight container for 3-4 days.
