Mashed "Potatoes" and Salad


Mashed "Potatoes"
The recipe is taken from Matt Amsden's "Rawvolution" book


Ingredients:
2 1/2 cups cauliflower, ground in food processor
1/4 cup raw macadamia nuts, ground in food processor
1/4 cup olive oil
1 tsp sea salt
1 small clove of garlic, peeled
Freshly ground black pepper

Method:
In a food processor, combine all of the ingredients except the pepper and process until the mixture looks fluffy, like mashed potatoes. Top with ground black pepper. 

Parsley Salad
Quickly put together fresh ingredients go very well with the cauliflower mash!


Ingredients:
A large bunch of fresh parsley
1 cup chopped cherry tomatoes
1/2 cup chopped spring onion
1/4 of 1 red capsicum
For the dressing:
1/4 cup lemon juice
1/4 cup olive oil
Sea Salt
2-3 cloves of garlic, peeled

Method:
Chop the parsley, transfer it to a large mixing bowl, add chopped cherry tomatoes, chopped capsicum and spring onion. Mix well.
Dressing:
In a blender, combine all the dressing ingredients and blend until smooth. Add to the salad, mix well and serve!
